Zucchini Bread

3 - eggs

2 cups - sugar

1 cup - oil

3 cups - flour

1/2 teaspoon - baking powder

1 teaspoon - salt

1 teaspoon - baking soda

2 teaspoons - cinnamon

2 cups - grated zucchini

2 teaspoons - vanilla

1/2 cup - chopped nuts


Mix together eggs, sugar, and oil. Sift together flour, baking powder, salt, soda, and cinnamon. Add to egg mixture. Stir in zucchini, vanilla, and nuts. Divide batter between 2 loaf pans. Bake at 350° for 1 hour. (This can be baked in a bundt pan and sprinkled with powder sugar when cool)
