Gooseberry Pudding

1/4 cup - Margarine

1/3 cup - Sugar

3/4 cup - Flour

1 tsp. - Baking Powder

1/2 cup - Milk

1 cup - Washed, Stemmed Gooseberries

1 cup - Sugar

1 tablespoon - Margarine

1 cup - Boiling Water

 

Cream margarine and sugar well, add baking powder to flour, mixing well, then add the milk to the creamed mixture. Spread batter into the bottom of a greased 8" pan, then top with gooseberries. Sprinkle 1 cup of sugar over berries, then dot with butter. Pour the boiling water over all and place in a 375° oven. Bake 30-40 minutes or until batter is done and lightly browned. Remove, cool only slightly. Cut in squares and serve at once.

Serves 6

* For a double recipe: Bake in a 9 x 13 inch pan. Use only 1 1/2 cup sugar on top *
